Harvest Highlights: Recipes with Honey

Early summer mornings at Waukivory Estate bring the gentle hum of our bee colonies, which are busy at work in our Flow Hives. December marked another successful honey harvest, and we're excited to share some of our favourite ways to use this season's bounty.

Our Flow Hive system allows us to harvest honey with minimal disruption to our bees - a practice that aligns perfectly with our commitment to sustainable farming. This year's harvest yielded a beautiful light amber honey, carrying subtle notes of eucalyptus and flowering ash from our fields and gardens.

In the farm HQ kitchen, we've been experimenting with different ways to use our fresh honey, and we've discovered some incredible recipes we can't wait to share with you.

  1. Lavender Honey Butter

First up is a delicate lavender honey butter that's become a staple in our breakfast baskets. We've been inspired by Churncraft's beautiful recipe, which combines the sweetness of honey with the gentle fragrance of lavender. It's perfect to spread on fresh sourdough or warm scones.
